Healthy(ish) Pancakes!

I just wanted to share a pancake recipe I made this morning :) I know pancakes can be quite common and easy to make but these tasted so good I thought I would share it! They are made with rolled oats and don't have any fattening products in them so I consider these a healthy take on the normal pancake. The recipe is from Alyson Holst's Children's Step by Step fun-to-cook book.

Pour 3/4 cup of milk over 3/4 cup of rolled oats into a bowl. Leave for a few minutes.

Add an egg and beat with fork.

Sift in 1/2 cup of self-raising flour, 3Tbsp of sugar and 1/2 tsp of salt.  Mix everything until combined and be sure not to over-mix.

Spray a pan with cooking oil or melt a small amount of butter in a pan. Pour or spoon a small amount of the mixture into the pan.

When small bubbles start to appear on the pancake flip over. You will know the pancake is done if it springs back when  you press it. 

The recipe makes about 12 small pancakes. Enjoy!!
