Baking a rabbit cake for hospice!

It's baking for hospice time again! You might remember last month I baked some rugby themed cupcakes for the north shore hospice. This month the theme was spring and after looking around online for a bit I decided to bake a rabbit cake! I got the idea and recipe from this website. I was very happy with this because:

a. It looked pretty good (if I do say so myself hehe)
b. I got the off cuts! YES!!!
c. There was remaining icing to eat with the of cuts! YEEEEESSSS!!!!!
d. I knew the people at the north shore hospice would like eating this cake! (and if they don't, i liked eating this cake so all goods!)

The batter! I made a pineapple and coconut cake!

And after! Can I just say this was super moist and delish!

I cut out the rabbit shape using a template.

The icing! It was interesting icing as it only used butter, flour coconut cream and normal sugar.

I iced the whole cake and started to put shredded coconut on top!

After I covered it with coconut it looked like a big lamington!

Then I used a peanut m and m for the eye, a normal m and m for the nose and liquorice for the  whiskers!

I then iced the pink parts for the ears!

I almost forgot to mention that my best friend came over and helped me too! Thank-you rachel! I really appreciated your help! She not only is great at decorating cakes but she kept me sane when I was decorating and perfecting the cake! : D

Snickers cupcakes!!!! And I'm going on holiday!

These cupcakes are soooooo sweet and amazing! They are the ultimate snickers cupcake! It starts with a chocolate cupcake and then it gets filled with snickers and caramel. Then to finish it's topped with a caramel butter cream and caramel sauce. It's decadent and sweet but the saltiness of the peanuts in the snickers contrasts well with the sweetness. I made these for my friend, Amy!

If you are going to make these, I recommend you do it over 2 or 3 days as they do take quite awhile. They are totally worth the effort though! I followed all the steps and recipes on this blog!

Big fat ZERO cupcakes and decorating them!

I had some leftover blue butter-cream icing to use up so I thought that I would bake some cupcakes to decorate! I wanted light and fluffy cupcakes because the icing was quite sweet and rich. I decided to try this recipe from the healthy food guide because I had made them once before and they weren't to sweet. An added bonus, these are fat free and low calorie (without the icing!)
